Winter may be a cold and depressing time of the year, but winter vegetables can make your kitchen feel bright and alive!
There is nothing like the warmth and smells of winter food cooking away. And one of my favorite types of winter vegetables are root vegetables. Root vegetables go way beyond carrots and potatoes, and also include:
sweet potatoes (so many varieties!)
Yes, all of these root vegetables at first appear dirty, hard, and sometimes come in weird shapes. But, once you slice and dice them, steam or roast them, they become bright and sweet and flavorful. Root vegetables pair wonderfully with all kinds of herbs and spices, they are very affordable, and they keep for a long time before going bad.
